DIY: salad dressing

One of the best ways to save money & ensure you know exactly what you’re eating is to make your own salad dressing. It’s sounds complicated but it’s so ridiculously uncomplicated once you know the secret.

Credit must be given to my mother for turning me on to the idea, to Martha Stewart for the basic recipe & to Green Mountain Gringo for selling your salsa in cute reusable mason jars that are now my dressing jars.

The most popular dressings are vinaigrettes of some kind (oil + vinegar + other stuff). The basic formula is 1 part vinegar to 2 parts oil. To make all kinds of yummy dressings for salads, veggies & marinades, stock your pantry with the following:

Extra Virgin Olive Oil (evoo)

A variety of good Vinegars (balsamic, white wine, red wine, apple cider, etc.)

Basic Seasonings (dried herbs, garlic & onion powder, salt, pepper)

Optional Ingredients: dijon mustard, lemon juice, grated parmesan cheese

You’ll also need a small bowl & a whisk, a measuring cup for liquids & measuring spoons for seasonings, if you aren’t ballsy enough to wing it. When you’re equipped, start with my 3 favorite recipes below.

Classic Balsamic Vinaigrette

The perfect everyday dressing.

Measure out 1/4 c. balsamic vinegar. Add 1 Tblsp. dijon mustard, a pinch of salt & a pinch of pepper. Slowly drizzle in 3/4 c. evoo while whisking vigorously.

ANNND, you’re done. How freaking easy was that?! Store in an airtight container in your fridge and it will keep for about a week. Shake it up before each use.

Restaurant Style Greek Dressing

Serve to dinner guests and blow their minds.

Measure out 2/3 c. of red wine vinegar & add 1 tsp. of the following: garlic powder, onion powder, dried oregano, dried basil, salt, pepper, dijon mustard. Then whisk in 1/2 c. evoo.

Lemon White Wine Vinaigrette

Light & Refreshing.

Measure out 1/4 c. white wine vinegar. Add the juice of 1 lemon, a pinch of salt & pepper, and a dollop of dijon mustard. Whisk in 3/4 c. evoo.

Try this on your next tomato-cucumber salad. It’s the perfect summery dressing.
